Parsnips produce roots with a sweet, nutty flavor and crisp texture. Roots are creamy white, shaped like a carrot and grow to 12 inches long and 2 inches across the top. Flavor is best if timed to mature during cool weather.

PLANTING
Before sowing, soak seeds 24 hours in water. Direct seed in mid-spring. Sow again in late summer in mild winter areas.

CARE
When seedlings are well established, thin to 3-5 inches apart. Water regularly and fertilize when 6 inches tall. Keep weed free.

HARVEST
Pull or dig entire plant when root shoulder is 2 inches across.
